
There is nothing quite like a tasty, fluffy – yet exquisitely crunchy homemade Belgian waffle 🥰. And since we’re exploring possibilities of using lemon curd this season, I’m experimenting with incorporating the lemon flavor into these gorgeous Belgian waffles.
Lemon flavor has long been associated with elegance and sophistication.
Lemon offers a balance of tartness, acidity, and subtle sweetness. This combination creates a “refreshing” and clean taste that appeals to a wide range of palates.
The acidity also enhances other flavors, making dishes feel more layered and elevated – taking your basic Belgian waffles to the next level and making them perfect for a Bridal Shower luncheon or Mother’s Day brunch.

Ingredients
For the Waffles:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup unsalted butter, melted and slightly cooled
- 1 3/4 cups whole milk (or buttermilk for a tangier flavor)
- 1 tsp pure vanilla extract
For the Lemon Curd:
- 4 large egg yolks
- 3/4 cup granulated sugar
- 1/4 cup fresh lemon juice (about 2 large lemons)
- 1 tbsp lemon zest
- 1/2 cup unsalted butter, cubed

Instructions
Step 1: Make the Lemon Curd
- In a heatproof bowl, whisk together the egg yolks, sugar, lemon juice, and zest.
- Place the bowl over a saucepan of simmering water (do not let the water boil over into the bowl).
- Cook, whisking constantly, until the mixture thickens and coats the back of a spoon (about 8-10 minutes).
- Remove from heat and whisk in the butter, one cube at a time, until smooth.
- Strain through a fine mesh sieve to remove any lumps.
- Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming. Let it cool, then refrigerate.
- Your lemon curd can be stored in the fridge for 1-2 weeks; OR it can be canned and stored for years (read here for directions on canning lemon curd!)
Step 2: Make the Waffles
- Preheat your waffle iron.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs, then whisk in the melted butter, milk, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir until just combined (some lumps are okay; do not overmix).
- Grease the waffle iron if necessary, then pour the batter in and cook according to your waffle iron’s instructions until golden and crisp.
Step 3: Serve
- Spread a generous layer of lemon curd over each warm waffle.
- Top with fresh berries, whipped cream, and a dusting of powdered sugar if desired. An alternate option would be roasted pecans especially if you’re enjoying this in the fall or winter
- Serve immediately and enjoy the bright, tangy sweetness!
